Vegetable Pasta Salad with a Cucumber Dill Dressing
I have those days when cooking over a hot stove for every meal can get a bit boring, and hot, to say the least. Creating a vegetable pasta salad is always my first thought when I want something fresh and simple. I love to grab whatever veggies I have piled in my refrigerator from the farmer’s market and toss everything together with a simple homemade dressing. And, of course, there’s always plenty of left overs throughout the week to grab and eat.
2 cups rotini pasta (dry)
2 cups broccoli
¾ cup cherry tomatoes, halved
½ cup sliced black olives
