Summer is all about starting up the grill or campfire, and as a child, a baked potato was my favorite thing to eat during my camping vacations. I was the usual salt, pepper, butter and a scoop if sour cream kind of girl. Since I’m a vegetarian now, I love finding or creating a few ideas to dress up my summer grilled potatoes into a full on potato party. The first potato I call “The Basic” is dressed with salt, pepper and butter. Then we have “The Savory” that’s filled with broccoli and cheddar. And “The Scrambled,” which has eggs, spinach and feta cheese (hands down my favorite).
